Good sourdough takes time — and that's exactly what we give it.
Our brown sourdough (خبز الساوردو الأسمر) is built on a live starter that we feed and maintain every day at Khobz bakery. The dough slow-ferments for an extended cold proof, which is why it develops that signature tangy depth, the open airy crumb you can see through, and a crust that cracks properly when you break it.
We use whole wheat flour that brings a natural nuttiness and a darker colour — this isn't food colouring or caramel, it's the wheat doing what it's supposed to do. The result is a loaf that feels substantial, toasts beautifully, and holds its own alongside strong flavours: aged cheese, olive oil and za'atar, labneh, or a proper bowl of soup.
Khobz is one of the few artisan bakeries in Kuwait baking sourdough from a live culture — not commercial yeast, not bread improver shortcuts. If you've tried sourdough in London, Paris, or Amman and wondered why the loaves here rarely match, this is the answer.
