Chocolate babka

Babka is not a quick bread. It's an enriched brioche dough, rolled with a generous filling of rich chocolate, then twisted and coiled so those layers of chocolate marble through every slice you cut. The twisting isn't just for looks — it's what creates the distinct swirled structure that makes babka babka.

Our chocolate babka starts with the same buttery brioche dough we use for our brioche loaf — eggs, butter, a slow fermentation — then filled with a dark chocolate mixture and twisted tightly before the final proof. It bakes to a deep golden with a crust that's slightly crisp at the edges and soft in the centre, while inside every slice reveals a spiral of dark chocolate running through the entire length of the loaf.

It's sweet but not dessert-sweet. The dark chocolate provides bitterness that keeps it balanced. A thick slice with morning coffee, or a thin slice after dinner — it works both ways.
