Pistachio mamol

If walnut mamoul is for the sophisticated palate and date mamoul is for the sweet tooth, pistachio mamoul (معمول فستق) is for those who appreciate the more refined, delicate end of the spectrum. The pistachio filling — sweet, slightly floral, unmistakably green — is more subtle than walnuts and less heavy than dates.

We use a smooth pistachio paste for the filling: ground pistachios mixed with just enough sugar and a whisper of rose water to highlight the natural fragrance of the nut without overwhelming it. The semolina-shortbread shell is identical to our date and walnut variants — pressed by hand in traditional wooden moulds, baked pale and dusted with powdered sugar.

Pistachio mamoul is often considered the premium tier of the mamoul family, partly because of the cost of the filling ingredient and partly because its flavour is more nuanced. In a mixed Eid box, it's the one that disappears first.
