Walnut mamol

The walnut mamoul (معمول جوز) is the one that the grown-ups in the family reach for first. Where date mamoul is sweet and straightforward, the walnut version introduces a warm, slightly bitter, aromatic complexity: the crushed walnut filling is spiced with cinnamon and a whisper of other warming spices, creating a depth of flavour that makes it the more sophisticated choice.

The shell is the same traditional semolina-flour shortbread — pressed by hand in wooden moulds, baked to a pale gold, dusted with powdered sugar. The contrast between that crumbly, lightly sweet shell and the rich, spiced walnut interior is what makes mamoul, mamoul.

We bake walnut mamoul in small batches at our Mubarak Al-Kabeer kitchen. It's available individually or as part of a mixed mamoul selection alongside date and pistachio variants — the standard gift box for Eid.
