White ciabatta

Ciabatta is one of those breads that looks deceptively simple but punishes shortcuts. The open, irregular crumb you see in a proper ciabatta — the big holes, the airy texture — only comes from a very wet dough, handled with care, and a hot oven that gives the loaf a proper oven spring.

Our white ciabatta (خبز شياباتا أبيض) is built exactly that way. We work with a high-hydration dough that is gently stretched and folded rather than punched and kneaded, which preserves those large air pockets. The result: a loaf with a crackly, golden crust and an interior that is simultaneously light and chewy — a combination that holds up to olive oil, aged labneh, or a pressed sandwich without going limp.

Slice it thick and grill it for bruschetta, tear it and dip it in olive oil and za'atar, or use it as the base for an open-faced sandwich. It handles heat well, which is why it's a staple in our catering and restaurant orders.
