White zatar ciabatta

The za'atar ciabatta (شياباتا الزعتر) brings together two great bread traditions without forcing them: the rustic, open-crumb Italian ciabatta and the Levantine za'atar mix that has flavoured flatbreads, pies, and dips across the Arab world for centuries.

The base is the same high-hydration ciabatta dough as our white ciabatta — the wet, sticky process that creates the big, irregular air holes. But here the dough is worked with a za'atar infusion: thyme, sumac, sesame, and olive oil folded through the dough so the flavour runs through every slice, not just the surface.

The result is a loaf that smells like a za'atar pie the moment you cut into it: herbal, slightly tangy from the sumac, with the warm nuttiness of sesame. The texture is still pure ciabatta — crackly golden crust, airy open crumb, that characteristic chew.

Use it the same way you'd use a white ciabatta, but with the knowledge that the bread has its own flavour character that will enhance rather than just carry whatever you put on it.
