Basbousa

Basbousa (بسبوسة) is one of those sweets that has been on Levantine and Gulf tables for generations — and for good reason. It's honest, it's unfussy, and when made with care it delivers something no amount of elaborate pastry can: pure, warm, familiar comfort.

Ours starts with a semolina batter enriched with yoghurt and a touch of butter, baked until it turns a deep golden colour with a slightly firm top. The moment it comes out of the oven, we soak it with a warm sugar syrup — lightly scented with rose water — which draws into every pore of the cake and leaves it intensely moist, dense in the best possible way, and sweet without being cloying. The top is finished with coconut and toasted almonds.

This is not the dry, crumbly basbousa you find in supermarket trays. We bake it fresh to order, in small batches, the way it should be made.

Note: our previous product description incorrectly described this as "an agile cake / artisan layered cake" — that was an error. Basbousa is a traditional semolina cake, full stop.

Halal. Made with no artificial flavourings. The rose water is the only non-essential ingredient — everything else is pantry-simple.
