Chocolate croissant (panu chocolate)

The pain au chocolat (كروسان شوكولاتة) — or chocolate croissant as most people call it — is the simplest argument for why quality laminated pastry matters.

At its core: the same slow-laminated buttery dough we use for all our croissants, wrapped around one or two pieces of dark chocolate, sealed and baked. The magic is in the contrast that happens in the oven: the pastry opens up into flaky golden layers on the outside while the chocolate inside melts fully into a smooth, liquid centre. When you bite through, you hit warm, rich dark chocolate at the exact moment the pastry shatters.

The quality of the chocolate matters enormously here. We use real dark chocolate — not a cheap compound — which means the filling has a slight bitterness and complexity that cuts through the butteriness of the pastry.

No almond cream, no extra flavourings. Just butter, laminated dough, and dark chocolate. The classic.
