Date mamol

Mamoul (معمول) is the cookie that belongs at every celebration in the Arab world — and if you're baking it right, it starts with the filling.

Our date mamoul uses a smooth date paste that is tender without being sticky and sweet without being cloying — it holds its shape cleanly inside the cookie so every bite gives you both the crumbly semolina-shortbread exterior and the warm, caramel-sweet date interior together.

The dough itself is a traditional semolina-flour blend, enriched and worked until it has just the right texture: firm enough to hold the intricate mould imprint (that distinctive floral or geometric pattern on the outside), but short and crumbly when you bite through it. We press each cookie by hand using traditional wooden moulds, which is why the pattern is sharp and the cookie weight is consistent.

Mamoul is the traditional sweet for Eid celebrations across Kuwait and the Levant — the tray that appears at every family gathering, alongside qahwa and cardamom tea. We also offer walnut and pistachio variants for those who want to send a mixed selection.
