Zatar croissant

The za'atar croissant (كروسان زعتر) is the intersection of two great bread traditions: the laminated French croissant and the Levantine za'atar mix that has been on Middle Eastern tables since before anyone wrote it down.

We start with the same buttery laminated dough as our plain croissant — the same overnight process, the same careful folding that creates the hundreds of flaky layers. Then we add a za'atar filling: the traditional mix of dried thyme, sumac, toasted sesame, and olive oil that gives the right balance of herbal, tangy, and nutty.

The za'atar is baked into the croissant as a swirl, so every layer has a trace of the filling and every bite delivers that savoury, aromatic depth together with the buttery richness of the pastry.

It's the croissant for people who find sweet pastries too sweet for breakfast. It's the one that works with a cup of Arabic coffee (قهوة عربية) or strong tea. And it's unequivocally Kuwaiti in the sense that it takes the best of two traditions and makes them work together.
